Southwestern Chopped Salad

Remember I made a resolution to try a new recipe at least once a month? Well, I DID end up making a new recipe or two within the past two weeks and I want to share one I really enjoyed. This recipe was inspired by a pin I found, originally from Greens n' Chocolate here. I didn't have all of the ingredients, so I had to improvise a little. Southwestern Salad

Serves: 2-4
  • 1 Head of Lettuce
  • 1 Green bell pepper, diced
  • 1-2 Avocado, diced
  • 1-2 Roma tomatoes, diced
  • 1 Can of sweet corn (drained)
  • 1 Can of black beans (rinsed)
  • 1 cup Cheddar Colby shredded cheese
  • 2 cups shredded chicken
  • Tortilla chips
  • Dressing Ingredients:
  • 1/2 cup mayonnaise
  • 2/3 cup plain Greek yogurt
  • 1 tbsp ranch seasoning
  • 1 tbsp taco seasoning
  1. Combine all veggies, chicken, and cheese in one large bowl. Top with tortilla chip crumbles. Prepare dressing and toss in or serve on the side.

I think I ate this for four or five meals in a row! It was really yummy, I felt good about eating it, and it was quick to prepare.

What have you been cooking recently? Any good recipes to share?  I haven't been cooking at ALL this week (I literally paid the lunch ladies in all dimes, nickels, and even a silver dollar. Yep. I'm that desperate and tired this week!) because I've been exhausted and stressed out over midterms and the middle school musical I am helping with. It seems like I can't catch my breath these days. When I come home, I crash. How do you get out of those funks? Any ideas? I could use some help!
