Not too long ago, I shared some of the Pinterest recipes I tried to get used to cooking for one, or to get used to packaging and freezing leftovers. Today, I thought I'd start off the week by sharing some of the recipes I've tried since.
I just made this for dinner last night and it was great. This was super easy to make and I had all of the ingredients on hand without planning ahead for it. I used elbow macaroni and bacon bits, but it worked out just fine. Yum. I'm looking forward to leftovers for lunch today!
I was super proud of myself for trying this recipe from Iowa Girl Eats. I never had spaghetti squash before, but I thought, "Why not?" and gave it a try. And let me tell you--it was delicious! I definitely think I need the sauce and meatballs because I don't think I'd like it as much on its own, but I was really pleased. Since I was cooking for myself, I dug out the second half and put it in a microwaveable bowl for the next day's lunch and it heated up just fine!
Lastly, I tried this oatmeal smoothie recipe not too long ago, using apple cider instead of coconut juice. I forgot the banana so I found the "oat" taste a little strong, but as I drank more of it, I got used to it. The recipe made a lot more than one serving so I put the rest in the freezer and haven't gotten around to thawing it a second time. I think I could definitely get used to drinking smoothies for breakfast or snacks if I could get the proportion right (and not forget ingredients!).

Also, on a side note--I hope that everyone has made it through Hurricane Sandy safely. I was very lucky to have not suffered any of the major consequences in central PA, dealing only with flickering lights, rain, wind, and no school for two days. My thoughts are with all of those who are still facing difficulties getting life back on track.
